Our aim is to demystify this craft and showcase the wide range of knives and tools used by both professional chefs and enthusiasts. With over a dozen different types of knives utilized in kitchens all across Japan, we take it upon ourselves to offer a comprehensive explanation of this unique assortment of tools. 

Each knife is meticulously handcrafted, ensuring the highest quality. With the techniques taught in this workshop, your knife can serve you for decades to come. We invite you to sharpen your own santoku knife, which you can take home as a cherished memento at the conclusion of the workshop. Our goal is for you to not only acquire knowledge but also to carry a tangible embodiment of your time in Japan, creating lasting memories for years ahead.

Cooking class: Ikejime and sashimi

We invite you to learn the ikejime technique and explore four distinct sashimi preparations. Our guest chef will guide you through each step of the process, allowing you to personally handle the live fish provided during this immersive experience. You will be responsible for the complete preparation.

Our aim is to provide our guests with a comprehensive understanding of these cooking techniques, which you can replicate in your own professional kitchen or at home. Needless to say, this is a hands-on experience, and our team of three professionals will be there to assist and accompany you throughout the workshop.
